Ingredients
  

Egg Mixture

  • 1/2 cup JUST Egg (or substitute) Can use flaxseed, chia egg, or aquafaba
  • 3/4 cup plant-based milk Almond, oat, soy, or coconut milk
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Pinch of salt

French Toast

  • 4 slices thick-cut bread Sourdough, brioche, ciabatta, or whole grain
  • vegan butter or coconut oil For cooking

Instructions
 

  • In a medium bowl, whisk together the JUST Egg (or substitute), plant-based milk, maple syrup, vanilla extract, cinnamon, and a pinch of salt until smooth.
  • Heat a non-stick skillet over medium heat and add vegan butter or coconut oil.
  • Dip each bread slice into the mixture for 10–15 seconds, ensuring it's coated but not soggy.
  • Place the soaked bread in the skillet and cook for 2–3 minutes on each side until golden brown and crispy.
  • Let the cooked French toast rest on a wire rack for a minute before serving to keep it crisp.

Notes

Feel free to experiment with different egg substitutes and plant-based milks to customize the flavor and texture to your liking!
