Teriyaki Salmon Bowl

Ingredients
  

Teriyaki Sauce

  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 2 tbsp sugar
  • 1 tsp grated ginger
  • 1 clove garlic minced

Salmon and Bowl

  • 2 fillets salmon skin-on, fresh or thawed
  • 1 cup steamed rice
  • 1/2 cup broccoli steamed
  • 1/2 cup carrots julienned
  • 1/4 cup edamame
  • sesame seeds for garnish

Instructions
 

  • Combine soy sauce, mirin, sugar, ginger, and garlic in a saucepan over medium heat. Stir until sugar dissolves and the sauce thickens slightly. Let cool.
  • Place salmon fillets in a shallow dish and pour the teriyaki sauce over them. Marinate in the refrigerator for 20–30 minutes.
  • Heat a nonstick skillet over medium heat. Cook the salmon skin-side down for 3–4 minutes. Flip and cook for another 2–3 minutes until the salmon is cooked through.
  • Assemble the bowl with steamed rice, broccoli, carrots, and edamame. Place the cooked salmon on top and drizzle with additional teriyaki sauce.
  • Garnish with sesame seeds and serve immediately.

Notes

You can substitute salmon with tofu or chicken for variety. Adjust sweetness or saltiness of the teriyaki sauce to taste.
