Peel, core, and slice the apples into even wedges (about 1/4-inch thick).
Melt butter in a large cast iron skillet over medium heat.
Add brown sugar, cinnamon, nutmeg, and salt. Stir until sugar is dissolved and the mixture starts to bubble.
Add the apple slices and toss to coat. Cook for 8-10 minutes, stirring occasionally, until the apples are tender but not mushy.
Stir in vanilla extract and lemon juice. Cook for an additional 1-2 minutes until fragrant and well combined.
Remove from heat and serve warm as a side dish or dessert topping.
