Ingredients
  

Filling

  • 2 cans pineapple chunks drained, reserve 1/4 cup juice
  • 1 cup granulated sugar
  • 6 tbsp all-purpose flour
  • 2 cups shredded sharp cheddar cheese

Topping

  • 1 sleeve buttery crackers crushed (like Ritz)
  • 1/2 cup unsalted butter melted

Instructions
 

  • Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
  • In a large mixing bowl, combine the drained pineapple chunks, sugar, flour, and reserved pineapple juice. Stir until well coated.
  • Gently fold in the shredded cheddar cheese. Pour the mixture into the prepared baking dish.
  • In a separate bowl, mix the crushed crackers with melted butter. Sprinkle evenly over the pineapple mixture.
  • Bake for 25-30 minutes, until the topping is golden brown and the casserole is bubbling around the edges.

Notes

Drain the pineapple well to avoid a soggy casserole. Let cool for 5-10 minutes before serving.
