Instructions
Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
In a large mixing bowl, combine the drained pineapple chunks, sugar, flour, and reserved pineapple juice. Stir until well coated.
Gently fold in the shredded cheddar cheese. Pour the mixture into the prepared baking dish.
In a separate bowl, mix the crushed crackers with melted butter. Sprinkle evenly over the pineapple mixture.
Bake for 25-30 minutes, until the topping is golden brown and the casserole is bubbling around the edges.
Notes
Drain the pineapple well to avoid a soggy casserole. Let cool for 5-10 minutes before serving.
