crushed pineapple

Instructions
Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
In a large bowl, whisk together sugar, eggs, and vanilla until frothy. Stir in melted butter.
In a separate bowl, combine flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, alternating with crushed pineapple.
Fold in optional nuts or coconut if using.
Pour batter into prepared loaf pan and bake for 50–55 minutes or until a toothpick comes out clean.
Cool in pan for 10 minutes before transferring to a wire rack. Drizzle with reserved pineapple juice if desired.
Notes
For a sweeter loaf, increase sugar by 1/4 cup. For a more tropical flavor, add a splash of rum extract or top with a pineapple glaze.
