Pineapple Bread

Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour sifted
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Wet Ingredients

  • 1 cup crushed pineapple drained, juice reserved
  • 1 cup sugar
  • 2 eggs room temperature
  • 1/2 cup unsalted butter melted
  • 1 tsp vanilla extract

Optional Add-ins

  • 1/2 cup chopped walnuts optional
  • 1/2 cup coconut flakes optional

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
  • In a large bowl, whisk together sugar, eggs, and vanilla until frothy. Stir in melted butter.
  • In a separate bowl, combine flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with crushed pineapple.
  • Fold in optional nuts or coconut if using.
  • Pour batter into prepared loaf pan and bake for 50–55 minutes or until a toothpick comes out clean.
  • Cool in pan for 10 minutes before transferring to a wire rack. Drizzle with reserved pineapple juice if desired.

Notes

For a sweeter loaf, increase sugar by 1/4 cup. For a more tropical flavor, add a splash of rum extract or top with a pineapple glaze.
