Ingredients
  

Main Ingredients

  • 4 pieces chicken thighs bone-in, skin-on
  • 1.5 lb baby potatoes halved
  • 3 tbsp olive oil
  • 4 cloves garlic minced

Seasoning

  • 1 tsp paprika smoked or sweet
  • 1 tsp dried rosemary
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper

Garnish

  • 1 tbsp parsley chopped, for garnish

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a sheet pan with parchment paper.
  • In a mixing bowl, toss the baby potatoes with olive oil, garlic, paprika, rosemary, salt, and pepper.
  • Place the chicken thighs and seasoned potatoes on the sheet pan. Drizzle with extra olive oil.
  • Roast in the oven for 40-45 minutes, or until the chicken is golden brown and cooked through (internal temperature of 165°F/75°C).
  • Garnish with chopped parsley and serve immediately.

Notes

For extra crispiness, broil the chicken for 2-3 minutes at the end of cooking time. Pair with a side salad or roasted vegetables for a complete meal.
