Instructions
Preheat the oven to 400°F (200°C). Line a sheet pan with parchment paper.
In a mixing bowl, toss the baby potatoes with olive oil, garlic, paprika, rosemary, salt, and pepper.
Place the chicken thighs and seasoned potatoes on the sheet pan. Drizzle with extra olive oil.
Roast in the oven for 40-45 minutes, or until the chicken is golden brown and cooked through (internal temperature of 165°F/75°C).
Garnish with chopped parsley and serve immediately.
Notes
For extra crispiness, broil the chicken for 2-3 minutes at the end of cooking time. Pair with a side salad or roasted vegetables for a complete meal.
