Pat the chuck steak dry with a paper towel and season generously with salt, pepper, and paprika.
Heat olive oil in a cast iron skillet over medium-high heat. Once hot, add the steak and sear for 3-4 minutes on each side until a golden crust forms.
Lower the heat, add butter and garlic to the pan. Baste the steak with the melted garlic butter for 2-3 minutes, flipping once.
Remove the steak from the pan and let it rest for 5 minutes. Garnish with chopped parsley before serving.
Notes
For a medium-rare finish, cook the steak to an internal temperature of 130°F (54°C). Letting it rest allows the juices to redistribute for a more tender bite.
