This Chicken Carbonara recipe combines tender chicken, savory pasta, and a rich, creamy sauce made with eggs, cheese, and pancetta. Perfect for a comforting, indulgent meal!
Cook the spaghetti in a large pot of salted water until al dente. Reserve 1/2 cup of pasta water before draining.
In a large skillet, heat olive oil over medium heat. Add chicken and cook until golden and cooked through, about 6–8 minutes. Remove from skillet and set aside.
Add minced garlic to the skillet and sauté for 1 minute.
Reduce heat to low. Add the cooked pasta to the skillet and toss with the garlic.
Remove the skillet from heat. Quickly mix in the whisked eggs and Parmesan cheese, tossing continuously to create a creamy sauce.
If the sauce is too thick, add a splash of reserved pasta water to reach the desired consistency.
