Creamy Chicken Carbonara

Ingredients
  

Pasta

  • 12 oz spaghetti cooked al dente

Chicken & Sauce

  • 2 tbsp olive oil
  • 1 lb chicken breast diced
  • 4 garlic cloves minced
  • 4 eggs whisked
  • 1 cup Parmesan cheese grated
  • salt and black pepper to taste
  • 1/4 cup parsley chopped

Instructions
 

  • Cook the spaghetti in a large pot of salted water until al dente. Reserve 1/2 cup of pasta water before draining.
  • In a large skillet, heat olive oil over medium heat. Add chicken and cook until golden and cooked through, about 6–8 minutes. Remove from skillet and set aside.
  • Add minced garlic to the skillet and sauté for 1 minute.
  • Reduce heat to low. Add the cooked pasta to the skillet and toss with the garlic.
  • Remove the skillet from heat. Quickly mix in the whisked eggs and Parmesan cheese, tossing continuously to create a creamy sauce.
  • If the sauce is too thick, add a splash of reserved pasta water to reach the desired consistency.
  • Fold in the cooked chicken and season with salt and black pepper to taste. Garnish with chopped parsley before serving.

Notes

For a smoky twist, add pancetta or bacon while cooking the chicken. Adjust salt levels depending on the type of cheese you use.
