Dough Ingredients

  • 2 cups cottage cheese small-curd or large-curd, blended for smoother texture
  • 3 cups all-purpose flour substitute half with whole wheat flour for a healthier option
  • 2 1/4 tsp active dry yeast 1 packet
  • 2 tbsp sugar
  • 1 tsp salt
  • 2 large eggs
  • 1/4 cup melted butter

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9x5-inch loaf pan.
  • In a large bowl, combine cottage cheese, eggs, melted butter, sugar, and salt. Mix until smooth.
  • Dissolve yeast in 1/4 cup of warm water (110°F). Let sit for 5-10 minutes until foamy.
  • Add yeast mixture and flour to the wet ingredients, mixing well after each addition.
  • Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
  • Let the dough rise in a greased bowl, covered, for 1-2 hours until doubled in size.
  • Shape into a loaf and place in the prepared pan. Let rise for another 30-45 minutes.
  • Bake for 35-40 minutes until golden brown. Internal temperature should be 190°F.
