Main Ingredients

  • 1 lb chicken thighs boneless, skinless
  • 4 carrots chopped
  • 3 celery stalks chopped
  • 4 potatoes cubed
  • 1 onion diced
  • 4 cups chicken broth low sodium

Seasonings

  • 1 tsp thyme dried
  • 2 bay leaves
  • 3 cloves garlic minced
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper freshly ground

Instructions
 

  • Place chicken thighs at the bottom of the crockpot.
  • Add chopped carrots, celery, potatoes, and onions on top.
  • Pour in the chicken broth and add thyme, bay leaves, garlic, salt, and pepper.
  • Cover and cook on low for 6-8 hours until chicken and vegetables are tender.
  • Remove bay leaves before serving.

Notes

This stew tastes even better the next day! Store leftovers in an airtight container in the fridge for up to 4 days.
