Instructions
Place chicken thighs at the bottom of the crockpot.
Add chopped carrots, celery, potatoes, and onions on top.
Pour in the chicken broth and add thyme, bay leaves, garlic, salt, and pepper.
Cover and cook on low for 6-8 hours until chicken and vegetables are tender.
Remove bay leaves before serving.
Notes
This stew tastes even better the next day! Store leftovers in an airtight container in the fridge for up to 4 days.
