  • 2 large ripe bananas mashed
  • 1 large egg binds the dough
  • 4 cups all-purpose flour adjust as needed for consistency
  • 1/2 tsp salt enhances flavor

For the Cinnamon Filling

  • 3/4 cup brown sugar adds rich caramel notes
  • 2 tbsp ground cinnamon for warmth and spice
  • 1/4 cup unsalted butter softened for easy spreading

For the Cream Cheese Frosting

  • 4 oz cream cheese softened
  • 1/4 cup unsalted butter softened
  • 1 cup powdered sugar for sweetness
  • 1 tsp vanilla extract adds depth

Instructions
 

  • Activate the Yeast: In a bowl, combine warm milk and yeast. Let sit for 10 minutes until frothy.
  • Mix Wet Ingredients: Whisk sugar, softened butter, mashed bananas, and egg. Add yeast mixture and stir.
  • Incorporate Dry Ingredients: Gradually add flour and salt. Knead for 8 minutes until smooth and elastic.
  • Proof the Dough: Let dough rise for 1–2 hours until doubled in size.
  • Spread Cinnamon Filling: Roll dough into a rectangle, spread filling, and roll tightly.
  • Bake: Cut into 12 pieces, let rise for 30 minutes, and bake at 350°F (175°C) for 25–30 minutes.
  • Prepare Frosting: Whip cream cheese, butter, powdered sugar, and vanilla. Spread over warm rolls.

Notes

Use overripe bananas for the best sweetness and moisture.
